Lion’s Mane & Porcini Mushroom Soup Recipe
Ingredients:
For the Mushroom Stock:
- 15g dried Lion's Mane mushrooms
- 15g dried porcini mushrooms
- 1 litre hot water
- 1 tbsp mushroom paste (optional, for added depth)
- 1-2 tbsp miso paste (optional, for a savoury umami boost)
For the Soup:
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 200g fresh mixed mushrooms (e.g., chestnut, cremini, or shiitake), sliced
- 1 large carrot, peeled and diced
- 1 celery stalk, diced
- 1 potato, peeled and diced
- 750ml mushroom stock (from above)
- 500ml vegetable stock (low sodium)
- 100ml coconut cream (or regular cream for a richer version)
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions:
Step 1: Make the Mushroom Stock
- In a large bowl, combine the dried Lion’s Mane and porcini mushrooms.
- Pour 1 litre of hot water over the dried mushrooms and cover the bowl. Let them steep for 30 minutes to rehydrate and infuse the water with their rich flavours.
- If you have mushroom paste or miso, stir them into the soaking liquid for added depth and a savoury, umami boost.
- After 30 minutes, strain the mushrooms, reserving the soaking liquid as your mushroom stock. Set the rehydrated mushrooms aside to use in the soup.
Step 2: Prepare the Soup Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Add the fresh mixed mushrooms and sauté for about 5-7 minutes until they release their moisture and start to brown.
Step 3: Build the Soup: Add the diced carrot, celery, and potato to the pot. Cook for 5 minutes, stirring occasionally. Pour in the prepared mushroom stock and the vegetable stock. Bring to a gentle boil, then reduce the heat and let it simmer for about 20 minutes or until the vegetables are tender. Roughly chop the rehydrated Lion’s Mane and porcini mushrooms and add them to the pot. Simmer for another 10 minutes to allow all the flavours to meld.
Step 4: Blend and Finish: Using an immersion blender, blend the soup until smooth and creamy. For a chunkier texture, blend only half of the soup. Stir in the coconut cream (or regular cream) and season with salt and pepper to taste. Simmer for a few more minutes until the soup is heated through.
Step 5: Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread on the side.
